Ingredients to make Vegetable Shrimp Dinner
•1 can of large shrimp.
¼ kg green beans; strung and cut diagonally.
4 small tomatoes, diced.
4 cucumbers, peeled and cut lengthwise.
1tablespoon finely chopped shallot.
1 tablespoon finely chopped fresh oregano leaves.
1 teaspoon mustard.
½ teaspoon sugar.
Juice of 1 large lemon.
2 tablespoons olive oil.
½ teaspoon ground black pepper.
1 tablespoon crushed or grated cheese.
Salt to taste.
Directions to make Vegetable Shrimp Dinner
Heat about 2 cups of water in a saucepan. Add the shrimp and salt, and cook till the shrimp turns opaque. Drain out the cooked shrimp and transfer into a serving bowl.
Combine the lemon juice, lemon peel, olive oil, oregano, shallot, mustard, pepper, sugar and salt. Whisk well. Toss the dressing, the shrimp and vegetable mix, in the bowl. Garnish with cheese.

Ingredients to make Grilled Tuna Dinner
3/4 cup extra virgin olive oil
1/2 cup minced parsley
1/2 cup jarred marinated roasted peppers, drained, diced
1/2 cup thinly sliced scallions
1/4 cup fresh lemon juice
2 tablespoons capers, drained
2 tablespoons minced fresh oregano, OR
2 teaspoons dried oregano
1/4 teaspoon salt
6 8-oz tuna steaks, about 3/4 inch thick
1/8 teaspoon freshly ground pepper
